Fiber maxing is everywhere right now. The trend encourages people to eat as much fiber as possible, often by packing huge amounts into a single meal.

Recipe developer Violet Witchel created the viral Dense Bean Salad craze and is one of the leading voices behind #BeanTok, which is all about finding delicious ways to eat more beans. Her salads are made for meal prep, and they actually get better after a day or two in the refrigerator.

Witchel recommends a more practical approach she calls fiber stacking—adding fiber-rich foods like beans throughout the day instead of trying to get it all at once.

Most adults need 25 to 38 grams of fiber a day, but the average American gets only about 15 grams. Beans are one of the easiest ways to close that gap. They’re packed with fiber and protein, plus iron, magnesium and folate. The fiber in beans also nourishes the beneficial bacteria in your gut, supports healthy cholesterol levels, helps keep blood sugar steady and may help you feel full longer.

Another trend, the Bean Protocol, encourages people to eat up to two cups of beans a day, especially for gut health and menopause. That’s a lot of beans!

Here’s the good news: Many of the studies that found health benefits from beans looked at people eating about ¾ cup a day—not two cups.
