Drawn Butter

A good trick is to allow the fat to cool on drawn butter, then pour it over cheesecloth; the cheesecloth will “grab” the fat.



1 stick (8 tablespoons) unsalted butter


Slowly melt butter in a small saucepan over low heat until butter foams and milk solids sink to bottom, about 15 minutes. Remove from heat. Let cool.

Skim foam from top, and discard the foam. Carefully pour clear butter into a bowl, leaving solids behind in the pan; discard solids. Serve warm.
