Marchand de Vin Sauce
Ingredients
1 tablespoon butter
¼ cup chopped shallots
1 tablespoon garlic
Salt and pepper, to taste
¼ cup dry red wine
Sprig of fresh thyme
1 cup demi-glace
Directions
Melt the butter in a saucepan over medium heat. Add the shallots and garlic. Season with salt and pepper, and sauté for 1 minute.
Add the red wine and thyme, and bring to a boil. Reduce the heat to medium and stir in the demi-glace. Simmer for 2 minutes and remove from the heat, keeping warm until ready to serve with steak. Remove thyme before serving.
