Salad in A Jar


Your favorite healthy salad dressing

1 purple onion, chopped

1 cucumber, sliced

1 small bag shredded carrots

1 small can corn

1 can of your favorite beans, unseasoned, drained

1 cup of your favorite cheese

1 cup Quinoa or Brown Rice, prepared

1 bag baby spinach

Your favorite nuts or seeds

Your favorite dried fruit


In a medium-size mason jar, stack ingredients in this order from bottom to top: dressing (2 tablespoons); add about ¼ cup of each of the following in this order: onions, cucumbers, carrots, corn, beans, quinoa, spinach, and top with nuts/seeds and dried fruit. Place the top of the mason jar and seal tightly. Store in the refrigerator until ready to serve. Salad will be best served within 2-3 days. Just prior to serving, shake the jar to mix the dressing into all ingredients. Empty salad onto a plate and serve. You can add additional 3 ounces lean protein such as grilled chicken, turkey, or shrimp if you choose after salad is plated.
