Gran Kinara Cheese just arrived from Piedmont, Italy
This vegetarian cousin of Parmigiano-Reggiano is made with thistle rennet, which helps separate the raw cow’s milk into curds and whey, and is aged for 12 months. It is pale yellow with a crumbly, buttery texture, and slightly tangy flavor, which comes from the vegetable rennet. Try it grated over pasta or risotto.
