Eat Right with Rouses
Bacon Pumpkin Pesto Pasta
Ingredients
1/2 can (7.5 ounces) pumpkin puree
1 16 ounce bag of Rouses whole wheat penne pasta, cooked
8 strips of bacon, cooked (can substitute turkey or chicken bacon)
1/4 cup Rouses pesto sauce
¼ cup Parmigiano Reggiano or fresh parmesan cheese, for garnish
Fresh basil leaves, for garnish
Directions
Combine the pesto and pasta and mix until coated. Add the pumpkin puree and bacon and toss until combined. Garnish with shaved parmesan cheese and fresh basil leaves.
