For extra-crispy fish, coat the fish in breading mix, then dip the coated fish in the egg mixture. Remove fish from the egg mixture and dredge it again in the breading mixture. Place battered fish in the hot oil, and fry until golden brown. Drain fish on paper towels before serving.

Fried Fish with Rouses Fish Fry Mix
4-6 fish filets (about 2 pounds)
1 box Rouses Fish Fry Breading Mix
2 quarts vegetable oil
Heat oil to 350 degrees.
Pour fish fry breading mix onto a plate. In a bowl, beat three eggs.
Dip each fish filet into the egg mixture, then coat fish evenly with breading mix, lightly patting off any excess.
Place battered fish in the hot oil, and fry until golden brown. Drain cooked fish on paper towels before serving.
