Grilled Peaches

8 ripe peaches, cut in half and pitted

Olive oil

¼ cup sugar

¼ cup dark rum

¼ cup almond liqueur, like Amaretto di Saronno

Rouses Vanilla Ice Cream, to serve


Preheat oven to 375°F.

Preheat grill or grill pan to medium-high and brush it with oil to keep the peaches from sticking. Place the peaches, cut side down, on the grill and cook until they’re slightly charred.

Place the peaches in an ovenproof dish, cut side up, and sprinkle each half with sugar.

In a small bowl, combine the rum and Amaretto; drizzle on the peaches.
