Peach Salsa
Ingredients
2 ripe but firm peaches, pitted and chopped coarse
1 small red onion, sliced into long, thin slices
1 small red bell pepper, cored, seeded and sliced thin
1 medium clove garlic, minced
¼ cup pineapple juice
6 tablespoons lime juice
1 medium jalapeño chile, minced
¼ cup chopped fresh parsley leaves
Pinch salt
Pinch black pepper
Directions
Mix all ingredients in medium bowl. Cover and refrigerate to blend flavors, at least 1 hour or up to 4 days.
