Ingredients
1 Kbosh Zucchini Keto Crust
Cooking spray
¼ cup Swerve Brown Sugar
1 tablespoon ground cinnamon
1 8-ounce package of cream cheese, softened
2 teaspoons vanilla extract
¾ cup Sola Low Calorie Sweetener (granulated), equally divided into 3 small ziplock sandwich bags
Food coloring (green, yellow, blue, red)
Directions
Preheat oven to 350°F. Spray baking sheet or pizza pan with cooking spray, and place crust on pan. Set aside.
In a small bowl, combine Swerve Brown Sugar and cinnamon, mixing well.
Sprinkle Swerve-cinnamon mixture evenly on top of crust and place in oven; bake for 8 minutes. Remove crust from oven and let cool.
In a separate bowl, combine softened cream cheese and vanilla extract. Using a hand mixer, whip the cream cheese-vanilla mixture approximately 3 minutes or until fluffy.
Gently spread the cream cheese mixture over the cooled crust (or use a piping bag). This is the hardest part. Don’t worry if it is not perfect; the colored sweetener you’ll add on top of it will conceal much of the cream cheese.
Add food coloring to each sandwich bag of Sola Sweetener. Add 3 drops of green food coloring to the first bag, 3 drops of yellow food coloring to the second bag, and 3 drops of blue food coloring and 3 drops of red food coloring (to make purple) to the third bag. Zip the bags closed and mix by hand to distribute color uniformly. If you want the colors to be deeper or brighter, continue to add the appropriate food coloring to each bag until the the color is as deep as you like.
Decorate the top of the pizza by sprinkling the colored sweeteners, one at a time, in whatever pattern or combination you choose, but alternating colors work best.
