Eat Right with Rouses
Mardi Gras Sweet Slaw Slider
1 Package Whole Grain Bun or Bagel (I used Dave’s Killer Bagel Everything Flavor)
½ Bag (3 cups) of cabbage slaw
½ cup purple cabbage, chopped
¼ cup Rouses Crushed Pineapple in 100% Juice
1 Tablespoon Rouses Apple Cider Vinegar
½ cup mayonnaise
1 Tablespoon Rouses Maple Syrup
1 teaspoon Rouses Everything But the Bagel Seasoning
Grilled chicken or Rotisserie Chicken (2 ½ cups), cut bite-sized, hot or cold
Make the slaw: In a large bowl, mix cabbage slaw and purple cabbage. In a separate small bowl, whisk the following ingredients together, crushed pineapple, apple cider vinegar, mayonnaise, maple syrup, everything but the bagel seasoning. Pour the liquid mixture over the cabbage mixture. Using tongs, toss the slaw until well coated with the liquid mixture. Set aside.
If using rotisserie chicken, debone the chicken thoroughly, and cut into bite size pieces. If using grilled chicken, cut into bite size pieces.
Assemble the sandwich: If needed, microwave the bread for 20 seconds to soften it or toast it. Prepare the sliders by opening the buns or bagels and assembling the slaw mix, topped with the chicken pieces. Add the top piece of bread and then slice into four even slider sandwich pieces. Serve with extra slaw.
