Eat Right with Rouses
Parmesan Spinach Dip
1 10 ounce package of frozen spinach, thawed (can substitute 2 large bags of fresh spinach)
1 12 ounce jar Rouses artichokes, chopped
1 cup mayonnaise made with olive oil or avocado oil
1 container of Rouses whipped cream cheese
½ cup yellow onion, freshly chopped
½ teaspoon garlic, minced
1 cup Rouses fresh parmesan cheese, grated, divided
Smoked Paprika, for garnish
Serve with carrots, bell peppers, lentil chips, plantain chips, baked chips, whole grain chips
Preheat oven to 350F. Prepare the spinach. If using frozen spinach, remove any excess water by draining or patting with a paper towel. If using fresh spinach, remove the bag or wash the fresh.
In a large bowl, combine spinach, artichokes, mayonnaise, and cream cheese. Mix well.
Add onion, garlic, and 1/2 cup of parmesan cheese. Mix well.
Add mixture to 8×8 or 9×9 baking dish. Smooth mixture evenly, then add remaining parmesan cheese over the top evenly. Sprinkle paprika over the cheese.
Bake approximately 30 minutes or until bubbly.
