Eat Right with Rouses

Veggie Frittata

1 tablespoon olive oil

1 medium red bell pepper, diced

3 cups spinach

5 eggs

½ teaspoon salt

¼ onion, diced

¼ cup milk

½ teaspoon black pepper

1 tablespoon basil, chopped

1 Roma tomato, sliced


Preheat the oven to 350 degrees.

Add olive oil to pan and saute onions, peppers, spinach until softened.  Whisk eggs with salt, pepper, milk.  Pour over cooked vegetables in pan.

Turn off stove and add sliced tomatoes on top.  and add pan to oven and bake for 20 minutes or until eggs are set. Once frittata is done, carefully remove from pan and place on a large plate.  Slice like pizza slices. Garnish with basil.

Optional: Top with shredded cheese.
