Eat Right with Rouses
Zucchini Shrimp Boats
4 large zucchinis
½ onion, chopped
½ pound of Rouses Gulf Shrimp, fresh or thawed, 51/70 count size
2 tablespoons Rouses Olive Oil
1 ¼ cup Rouses shredded mozzarella cheese, divided
1 ¼ cup Rouses Marinara Sauce
Rouses Italian Seasoning, to taste
4 green onions, chopped
Preheat oven to 400F.
Slice zucchini lengthwise and scoop out and discard the center seeds. Place on a baking sheet or casserole dish.
Combine olive oil, shrimp and onions in a pan and cook until shrimp is fully cooked and set aside.
In each zucchini section add the following layers in this order: add ½ cup of mozzarella cheese, top with shrimp mixture, spread ¼ cup marinara sauce, ¾ cup mozzarella cheese. Sprinkle with Italian seasoning.
Bake for 20 minutes or until cheese is melted and zucchini is softened.
Garnish with chopped green onions.
