Eat Right with Rouses
Spinch & Cheese Egg Muffins
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
1/2 cup shredded Cheddar cheese (or your favorite cheese)
¼ cup spinach leaves, tear into small pieces (optional)
Preheat oven to 350 degrees F and line your muffin pan with paper muffin liners. Spray liners with olive oil cooking spray.
Beat eggs in a large bowl. Stir in garlic powder, salt, and garlic powder. *Tip: if you are cooking with kids, let them beat their own egg in a cup and pour into liner.
Fill each muffin tin ½ way with egg mixture.
Top each egg with cheese and spinach as desired.
Bake in preheated oven until a knife inserted near the center comes out clean, 20 to 25 minutes.
