Eat Right with Rouses
Taco Soup with Beans
Ingredients
1 yellow onion, finely chopped
1 tablespoon Rouses olive oil
1 pound of lean ground turkey meat
1 can pinto beans, drained and rinsed (14.5 ounce can)
1 can garbanzo beans, drained and rinsed (14.5 ounce can)
2 cans Rouses no salt added diced tomatoes (14.5 ounce can)
2 ears of fresh corn, removed from cob
2 ½ cups of unsalted chicken broth
3 Tablespoons Rouses chili powder
1 Tablespoon Rouses ground cumin
1 teaspoon Rouses garlic powder
½ packet of Ranch seasoning
Directions
In a large pot, sauté onion in olive oil until onions start to turn clear/opaque over medium/high heat. Add the turkey meat along with diced tomatoes and cook meat until fully cooked. Add remaining ingredients and stir well. Cook on medium/high heat until mixture beings to bubble. Place the lid on the pot turn heat on low. Simmer for 30 minutes, stirring occasionally. Turn heat off and let stand for 15 minutes before serving. Topping suggestions: lightly with shredded cheese, fresh cilantro, or diced avocado.
