Black Bean Burger

Make these patties ahead and individually freeze as an easy meal prep on busy weeknights.

Ingredients

1 pound lean ground beef or lean ground turkey

1 can of black beans, drained

2/3 cup bread crumbs, plus 1 to 2 tablespoons as needed

2 medium eggs

1 teaspoon of Cajun seasoning

½ teaspoon black pepper

1 teaspoon of ground cumin

Directions

In a medium bowl, combine ground meat, black beans, bread crumbs, and eggs. With clean hands (and gloves if you like) combine the mixture by hand until evenly mixed together. If the mixture seems a little wet and sticky, you can add another tablespoon or two of bread crumbs. Make sure it does not get too dry or ‘bready.’

After mixture is combined, take a handful of meat mixture and pat down in a round shape in the palm of your hand; about ½ inch thickness which will be around 3 to 4 ounces of mixture. Place on parchment paper or sheet pan.

After you use all the meat mixture to make patties, you are ready to cook. These burgers can be grilled or cooked in a pan over the stove. If using the stove, oil the pan just enough to coat the bottom of the pan to prevent your burgers from sticking to the pan. Cook your burgers until the internal temperature reaches 155F for 15 seconds.

Serving suggestions: Have your burger with brown rice and a side of veggies.
