Eat Right with Rouses
Rouses Whole Wheat Pasta Salad with Marinated Artichokes
½ bag Rouses Whole Wheat Penne Rigate Pasta, prepared
2 cups broccoli, chopped
1 cup cherry tomatoes, halved
2 tablespoons red onion, finely chopped
2/3 cup Rouses Marinated Artichoke Hearts, drained and chopped
½ teaspoon Rouses ground cumin
1 tablespoon Rouses Dijon Mustard
½ cup Rouses Light Mayonnaise
Salt and pepper to taste
Prepare pasta as directed per package.
In a large mixing bowl, add pasta and let cool for 10-15 minutes.
Mix in broccoli, tomatoes, red onion, and artichoke hearts.
Add in ground cumin, Dijon mustard, and mayonnaise. Stir well until all ingredients coated with mixture.
Serve as a side dish, over a salad, or add a protein for a main dish.
